Acorn Processing: The Abundance of Oaks

Participants will learn to select good acorns, dry them, crack them, grind them for flour, and leach them of bitter tannins—and will leave with a better understanding of the collective care needed to care for our local oak forests. Together we will process enough nuts for everyone to bring home a batch of acorn flour, and we will break for acorn themed snacks (sourdough! pudding!) around lunch time. Students will leave with a detailed understanding of how to make the best of our local abundance and several acorn flour recipes. Participants are encouraged but not required to collect an acorn stash in advance!
