Acorn Processing: The Abundance of Oaks

Participants will learn to select good acorns, dry them, crack them, grind them for flour, and leach them of bitter tannins—and will leave with a better understanding of the collective care needed to care for our local oak forests. Together we will process enough nuts for everyone to bring home a batch of acorn flour, and we will break for acorn themed snacks (sourdough! pudding!) around lunch time. Students will leave with a detailed understanding of how to make the best of our local abundance and several acorn flour recipes. Participants are encouraged but not required to collect an acorn stash in advance!

Elspeth Hay is a willow basket weaver, radio journalist, and author of the award-winning 2025 book Feed Us with Trees: Nuts and the Future of Food. She lives in Wellfleet, where she is deeply immersed in the materials and foods of our local ecosystem.
